Friday morning found me in the mood to can peaches. I bought a lug on Thursday when I got groceries.
As I started getting the peaches ready I decided to try my hand at making jam. I boiled water on the stove and filled a pan with ice and water in the sink. After cutting an x in the bottom of 8 peaches I put them in the boiling water for one minute and then moved them to the ice water. The peels came right off and I sliced the peaches into a pan and mashed them a bit. I then added 5 cups of sugar, 2 Tablespoons of fruit pectin and 2 tablespoons of lemon juice. I brought the mixture to a low boil for 20 minutes, remove foam from the top and put the mixture in to hot jars. Time to hot water bath for 20 minutes. The finished product looks good and we will be enjoying it for awhile. Maybe some homemade bread is in order.

ReplyDeleteI am the pioneer woman want to be. I actually was the pioneer woman many years ago whne you were small and I was canning most of our food from the garden. LOL
ReplyDeleteYum, this looks delicious! We bought a book on how to do canning in the microwave and have been meaning to make some jam before all the summer fruits are gone. Perhaps we will have to try it out this weekend :)

I am sure we has other similar interests too!For one is Galena---we have been going there for 22 years now....we always go in the fall, such a beautiful time of the year. We stay in a neat small place in the country over looking Galena then take daily side trips.Looks as though you enjoyed your visit at the Snoop Sister's B&B.

We had a great time at the fair. I have a garden in our back yard and I love to grow veggies and herbs--I belong to an herb study group too. I was asked to Judge the herbs this year with two other gals. Lot's of fun!
